Blueberry Lemon Bread

This moist and flavorful Blueberry Lemon Bread combines fresh blueberries with bright lemon zest for a perfect sweet and tangy treat, ideal for breakfast or dessert.

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • Zest of 1 lemon
  • 2 tablespoons fresh lemon juice
  • 1 cup fresh blueberries

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream the butter and sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in vanilla extract, lemon zest, and lemon juice.
  5. Alternately add the flour mixture and sour cream to the wet ingredients, beginning and ending with the flour mixture. Mix until just combined.
  6. Gently fold in the blueberries, being careful not to crush them.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For extra tang, drizzle a lemon glaze made from powdered sugar and lemon juice over the cooled bread before serving.
