  • 1 tablespoon lemon juice
  • 2 teaspoons cornstarch
  • 1 cup all-purpose flour

  • 6 tablespoons cold unsalted butter, cubed
  • 1/4 cup boiling water
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine blueberries, 3/4 cup sugar, lemon juice, and cornstarch. Toss gently to coat, then pour into a greased 8-inch square baking dish.
  3. In another bowl, whisk together flour, 1/4 cup sugar, baking powder, and salt.
  4. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  5. Stir in boiling water and vanilla extract until just combined to form a soft dough.
  6. Drop spoonfuls of dough evenly over the blueberry mixture.
  7. Bake for 35-40 minutes until the topping is golden brown and the blueberry filling is bubbly.
  8. Let cool slightly before serving. Enjoy with whipped cream or vanilla ice cream if desired.

Notes

For an extra touch, sprinkle a little coarse sugar on the biscuit topping before baking to add a pleasant crunch.
