  • 2 cups sourdough starter (active and bubbly)
  • 3 cups all-purpose flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup whole milk, warm
  • 1 large egg
  • 1/4 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh blueberries
  • 2 tablespoons coarse sugar for topping
  • Olive oil for greasing the pan

Instructions

  1. In a large bowl, combine the sourdough starter, warm milk, egg, and softened butter. Mix well.
  2. Add in the sugar, salt, and flour gradually, mixing until a soft dough forms.
  3. Turn the dough onto a floured surface and knead for about 8-10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a clean towel, and let it rise for 3-4 hours or until doubled in size.
  5. While the dough is rising, prepare the cheesecake filling by mixing cream cheese, powdered sugar, and vanilla extract until smooth.
  6. Once the dough has risen, punch it down and transfer to a greased focaccia pan. Stretch the dough gently to fit the pan.
  7. Spread the cheesecake filling evenly over the dough, leaving a small border around the edges.
  8. Scatter fresh blueberries evenly over the cheesecake layer.
  9. Cover and let the dough rise again for 1-2 hours until puffed.
  10. Preheat the oven to 375°F (190°C). Drizzle olive oil over the dough and sprinkle coarse sugar on top for a slight crunch.
  11. Bake for 25-30 minutes or until the focaccia edges are golden brown and the cheesecake layer is set.
  12. Remove from oven and cool before slicing and serving.

Notes

For a richer flavor, drizzle a honey glaze over the focaccia when cool, or add a sprinkle of lemon zest to the cheesecake filling.
