Blueberry Buckle

A moist and tender blueberry buckle with a buttery crumb topping, perfect for breakfast or dessert. This classic American treat highlights fresh blueberries in a simple, comforting cake.

  • 2 cups fresh blueberries
  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 1/4 cup granulated sugar (for topping)
  • 1/2 tsp ground cinnamon (for topping)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a 9-inch square baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the softened butter and sugar together until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. Alternately add the flour mixture and buttermilk to the butter mixture, beginning and ending with the flour mixture. Mix until just combined.
  6. Gently fold in the blueberries.
  7. Pour the batter into the prepared pan and spread evenly.
  8. Mix the 1/4 cup sugar and cinnamon together, then sprinkle evenly over the top of the batter.
  9. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  10. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For extra flavor, serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
