BLT Pasta Salad (no meat)

A fresh and flavorful BLT pasta salad that skips the meat but keeps all the classic taste with crispy lettuce, juicy tomatoes, and a creamy dressing perfect for a light lunch or side.

Ingredients

  • 8 oz rotini pasta
  • 2 cups cherry tomatoes, halved
  • 1 cup iceberg lettuce, shredded
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1/3 cup mayonnaise
  • 2 tablespoons sour cream
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Optional: 4 strips turkey bacon, cooked and crumbled (omit for fully meat-free)

Instructions

  1. Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool.
  2. In a large bowl, combine the cooked pasta, cherry tomatoes, shredded lettuce, cucumber, red onion, and cheddar cheese.
  3. In a small bowl, whisk together mayonnaise, sour cream, apple cider vinegar, smoked paprika, garlic powder, salt, and pepper to create the dressing.
  4. Pour the dressing over the pasta mixture and toss well to coat evenly.
  5. If using, gently fold in the crumbled turkey bacon for added texture and flavor.
  6. Chill the salad in the refrigerator for at least 30 minutes before serving to allow flavors to meld.
  7. Serve cold as a refreshing, meat-free BLT-inspired pasta salad.

Notes

For a vegan version, substitute mayonnaise and sour cream with plant-based alternatives and skip the bacon. Add avocado slices for extra creaminess.
