  • 1 lb boneless, skinless chicken breasts, sliced thinly
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, sliced
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • 4 flour tortillas
  • Fresh lime wedges, for serving
  • Optional toppings: sour cream, salsa, shredded cheese, chopped cilantro, avocado slices

Instructions

  1. Preheat your Blackstone griddle or skillet over medium-high heat and lightly oil the surface.
  2. In a bowl, combine chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss the sliced chicken with the spice mix until evenly coated.
  3. Add olive oil to the griddle, then cook the chicken slices for 5-7 minutes, stirring occasionally, until cooked through and slightly charred. Remove from the griddle and set aside.
  4. Add sliced bell peppers and onions to the griddle and cook for 4-5 minutes until softened and slightly caramelized.
  5. Return the chicken to the griddle and mix with the peppers and onions, warming everything together for 2 minutes.
  6. Warm the flour tortillas on the griddle for about 30 seconds each side until pliable and lightly toasted.
  7. Assemble the fajitas by placing the chicken and vegetable mixture onto the tortillas. Serve with lime wedges and your favorite toppings.

Notes

For extra flavor, marinate the chicken in the spice mix with a splash of lime juice for 30 minutes before cooking. Serve with fresh guacamole or pico de gallo for a vibrant twist.
