Black Bean Veggie Burger

A hearty and flavorful black bean veggie burger packed with wholesome ingredients, perfect for a nutritious and satisfying meal.

  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup breadcrumbs
  • 1/4 cup finely chopped red bell pepper
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1 tablespoon ground flaxseed mixed with 3 tablespoons water (flax egg)
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh cilantro (optional)
  • 1 tablespoon olive oil (for cooking)
  • 4 whole wheat burger buns
  • Lettuce, tomato slices, and avocado for serving

Instructions

  1. In a small bowl, combine ground flaxseed and water; let sit for 5 minutes to thicken.
  2. In a large bowl, mash black beans with a fork or potato masher until mostly smooth with some chunks remaining.
  3. Add the chopped red bell pepper, onion, garlic, cumin, smoked paprika, salt, pepper, and cilantro to the mashed beans; mix well.
  4. Stir in the flax egg and breadcrumbs until the mixture holds together when formed into patties. If too wet, add more breadcrumbs; if too dry, add a splash of water.
  5. Form the mixture into 4 equal-sized patties.
  6. Heat olive oil in a skillet over medium heat. Cook patties for 4-5 minutes per side, until crisp and heated through.
  7. Serve the veggie burgers on whole wheat buns topped with lettuce, tomato slices, and avocado as desired.

Notes

For extra flavor, try adding a slice of your favorite cheese or a dollop of spicy mayo when serving.
