Corned Beef

Corned Beef is a flavorful, tender salt-cured beef brisket, perfect for hearty meals and traditional celebrations. This classic dish offers a rich, savory taste with simple preparation.

  • 3-4 pounds beef brisket (corned beef)
  • 1 onion, peeled and quartered
  • 4 cloves garlic, smashed
  • 2 bay leaves
  • 1 tablespoon black peppercorns
  • 1 teaspoon mustard seeds
  • 4 cups beef broth or water
  • 3 large carrots, peeled and cut into chunks
  • 4 medium potatoes, peeled and halved
  • 1 small head of cabbage, cut into wedges

Instructions

  1. Rinse the corned beef brisket under cold water to remove excess salt.
  2. Place the brisket in a large pot and add beef broth or water, onion, garlic, bay leaves, peppercorns, and mustard seeds.
  3. Bring to a boil, then reduce to a simmer and cover. Cook for about 2.5 to 3 hours or until the meat is tender.
  4. Add the carrots and potatoes to the pot and cook for an additional 20-30 minutes until they start to soften.
  5. Add the cabbage wedges and cook for another 10-15 minutes until the cabbage is tender.
  6. Remove the meat and vegetables from the pot. Let the corned beef rest for 10 minutes before slicing against the grain.
  7. Serve the sliced corned beef with the cooked vegetables and some of the cooking liquid spooned over the top.

Notes

For an extra touch of flavor, serve with mustard or horseradish sauce and accompany with Irish soda bread.
