Benedictine Spread

Benedictine Spread is a creamy, tangy cucumber and cream cheese spread perfect for sandwiches, crackers, or as a flavorful dip.

Ingredients

  • 1 cup cream cheese, softened
  • 1/4 cup peeled, seeded, and finely grated cucumber
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh dill or chives
  • 1 teaspoon prepared horseradish (optional)
  • Salt and pepper, to taste

Instructions

  1. Place the softened cream cheese in a medium bowl.
  2. Grate the peeled and seeded cucumber finely, then squeeze out excess moisture using a clean kitchen towel or paper towel.
  3. Add the grated cucumber, mayonnaise, lemon juice, chopped dill or chives, and horseradish (if using) to the cream cheese.
  4. Mix all ingredients thoroughly until smooth and well combined.
  5. Season with salt and pepper to taste.
  6. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.

Notes

For a twist, try adding a dash of cayenne pepper or chopped green onions. Serve chilled with fresh bread, crackers, or vegetable sticks.
