Beef Kabobs with Bell Peppers & Zucchini

These flavorful beef kabobs feature tender marinated beef paired with vibrant bell peppers and zucchini, perfect for a quick and healthy grilled meal.

Ingredients

  • 1 lb beef sirloin, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch pieces
  • 1 yellow bell pepper, cut into 1-inch pieces
  • 1 medium zucchini, sliced into 1/2-inch thick rounds
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • Wooden or metal skewers

Instructions

  1. In a bowl, combine olive oil, minced garlic, soy sauce, lemon juice, oregano, salt, and pepper to create the marinade.
  2. Add beef cubes to the marinade, toss to coat evenly, and refrigerate for at least 30 minutes.
  3. If using wooden skewers, soak them in water for 20 minutes to prevent burning.
  4. Preheat the grill to medium-high heat.
  5. Thread beef cubes, bell peppers, and zucchini alternately onto skewers.
  6. Grill kabobs for about 10-12 minutes, turning occasionally, until the beef is cooked to desired doneness and vegetables are tender.
  7. Remove from grill and let rest for a few minutes before serving.

Notes

For extra flavor, sprinkle chopped fresh parsley or drizzle with tzatziki sauce before serving.
