BBQ Stuffed Meatloaf

This BBQ Stuffed Meatloaf combines tender ground beef with a smoky barbecue center, creating a flavorful and hearty meal perfect for dinner gatherings or family nights.

  • lbs ground beef
  • 1 cup BBQ sauce, divided
  • 1 cup shredded cheddar cheese
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup breadcrumbs
  • 1 large egg
  • 2 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine ground beef, onion, garlic, breadcrumbs, egg, Worcestershire sauce, smoked paprika, salt, and pepper.
  3. Divide the meat mixture in half. Press one half into a loaf shape on a baking sheet lined with parchment paper.
  4. Spread half of the BBQ sauce evenly over the meatloaf layer.
  5. Layer the shredded cheddar cheese over the BBQ sauce.
  6. Top with the remaining meat mixture, sealing the edges to encase the BBQ sauce and cheese.
  7. Brush the top with the remaining BBQ sauce.
  8. Bake for 60-70 minutes, or until the meatloaf is cooked through and internal temperature reaches 160°F (71°C).
  9. Let rest for 10 minutes before slicing and serving.

Notes

For an extra smoky flavor, try adding a teaspoon of liquid smoke to the meat mixture or serve with extra BBQ sauce on the side.
