BBQ Pulled Chicken Sandwiches

Tender, smoky BBQ pulled chicken piled high on soft buns makes for the perfect easy and flavorful sandwich, ideal for weeknight dinners or casual gatherings.

  • 2 lbs boneless, skinless chicken breasts
  • 1 cup BBQ sauce
  • 1/2 cup chicken broth
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 4 sandwich buns
  • Optional: coleslaw for topping

Instructions

  1. Heat olive oil in a skillet over medium heat and sauté the chopped onion and garlic until softened, about 3-4 minutes.
  2. Place the chicken breasts in a slow cooker or instant pot and add the sautéed onions and garlic, chicken broth, salt, and pepper.
  3. Cook on low for 6-7 hours (slow cooker) or high pressure for 15 minutes (instant pot), until chicken is tender and easily shredded.
  4. Remove chicken and shred it using two forks.
  5. Return shredded chicken to the cooker and stir in BBQ sauce until fully coated and heated through.
  6. Toast the sandwich buns if desired, then pile the pulled chicken on each bun.
  7. Top with coleslaw if using, then serve immediately.

Notes

For extra flavor, add a splash of apple cider vinegar to the BBQ sauce mixture or serve the sandwiches with pickled jalapeños for a spicy kick.
