BBQ Corn Dip

This BBQ Corn Dip combines smoky grilled corn with creamy cheese and tangy barbecue flavors, perfect as a crowd-pleasing appetizer or party snack.

  • 3 cups grilled corn kernels (about 4 ears)
  • 1 cup shredded cheddar cheese
  • 1 cup cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/4 cup barbecue sauce
  • 1/4 cup diced red bell pepper
  • 2 green onions, sliced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. In a large bowl, combine the cream cheese, mayonnaise, and barbecue sauce until smooth.
  2. Add the grilled corn kernels, shredded cheddar, diced red bell pepper, and sliced green onions to the bowl.
  3. Mix in the smoked paprika, garlic powder, salt, and pepper until all ingredients are well incorporated.
  4. Transfer the mixture to a serving dish and smooth the top with a spatula.
  5. Garnish with chopped fresh cilantro and an extra sprinkle of smoked paprika if desired.
  6. Serve with tortilla chips, crackers, or fresh vegetable sticks.

Notes

For extra depth, try adding a small amount of finely chopped jalapeño for a spicy kick or use smoked gouda instead of cheddar for a richer flavor.
