  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips
  • 1 pint vanilla ice cream, softened
  • Orange food coloring
  • Black decorating gel or melted chocolate for lines

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, cream butter, brown sugar, and granulated sugar until light and fluffy.
  4. Add egg and vanilla extract to the butter mixture and beat well.
  5. Gradually add dry ingredients to the wet ingredients and mix until combined.
  6. Stir in chocolate chips.
  7. Divide dough and tint one portion with orange food coloring to achieve a basketball color.
  8. Form small rounds of orange cookie dough and flatten slightly on prepared baking sheets.
  9. Bake cookies for 8-10 minutes or until edges are golden; cool completely.
  10. Once cooled, spread a scoop of vanilla ice cream between two cookies to form sandwiches.
  11. Use black decorating gel or melted chocolate to pipe basketball lines on the cookie surface.
  12. Freeze assembled sandwiches for at least 1 hour before serving for best texture.
