Banana Nut Bagels

These Banana Nut Bagels combine the natural sweetness of ripe bananas with crunchy nuts for a flavorful and wholesome breakfast treat. Perfectly chewy and subtly sweet, they make an excellent homemade snack or morning delight.

  • 2 ripe bananas, mashed
  • 3 ½ cups bread flour
  • 2 tablespoons sugar
  • 1 packet (2 ¼ tsp) active dry yeast
  • 1 teaspoon salt
  • ½ cup warm water (110°F)
  • ½ cup chopped walnuts or pecans
  • 1 tablespoon vegetable oil
  • 1 tablespoon honey (for boiling)

Instructions

  1. In a small bowl, dissolve yeast in warm water and let it sit until foamy, about 5-7 minutes.
  2. In a large mixing bowl, combine mashed bananas, sugar, salt, and vegetable oil.
  3. Add the foamy yeast mixture to the banana mix and stir to combine.
  4. Gradually add bread flour, mixing until a dough forms. Knead dough on a floured surface for about 8-10 minutes until smooth and elastic.
  5. Incorporate chopped nuts into the dough evenly.
  6. Place the dough in a greased bowl, cover, and let it rise in a warm place until doubled in size, about 1 to 1 ½ hours.
  7. Once risen, punch down the dough and divide into 8 equal portions. Shape each into a ball and poke a hole through the center to form a bagel shape.
  8. Preheat oven to 425°F (220°C). Bring a large pot of water and honey to a gentle boil.
  9. Boil each bagel for 1-2 minutes on each side, then transfer to a parchment-lined baking sheet.
  10. Bake in the oven for 15-18 minutes or until golden brown.
  11. Remove from oven and cool on a wire rack before serving.

Notes

For extra flavor, sprinkle cinnamon or sugar on top before baking, or try toasting the bagels and spreading cream cheese for a delicious breakfast.
