  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3/4 cup buttermilk
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh blueberries

Instructions

  1. Preheat the oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, granulated sugar, brown sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, combine buttermilk, vegetable oil, eggs, and vanilla extract; whisk until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined; avoid overmixing.
  5. Fold in the fresh blueberries carefully to distribute evenly.
  6. Divide the batter evenly among the muffin cups, filling each about 3/4 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  8. Remove from oven and let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

For a crumbly topping, sprinkle muffins with a mixture of sugar, flour, and butter before baking.
