Baked Cheesy Dumpling Casserole

A comforting baked casserole featuring tender dumplings smothered in a rich, cheesy sauce that’s perfect for a hearty dinner.

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 tablespoons melted butter
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 cups cooked chicken, shredded (optional)
  • 1 cup sour cream
  • 1/2 cup chopped green onions
  • 1 cup chicken broth
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. Stir in milk and melted butter until just combined to make the dumpling batter.
  4. In a separate mixing bowl, combine cooked chicken, sour cream, green onions, half the cheddar cheese, and chicken broth; season with salt and pepper.
  5. Spread the chicken mixture evenly in a greased baking dish.
  6. Drop spoonfuls of the dumpling batter over the chicken mixture.
  7. Sprinkle the remaining cheddar and mozzarella cheeses over the top.
  8. Bake for 30-35 minutes until dumplings are golden and cooked through, and the casserole is bubbly.
  9. Let rest for 5 minutes before serving.

Notes

For a vegetarian version, omit the chicken and add sautéed mushrooms and spinach for extra flavor and texture.
