A fresh and zesty Avocado Corn Salsa that’s perfect as a healthy snack or a vibrant topping for your favorite Mexican dishes. Bursting with creamy avocado, sweet corn, and tangy lime, this salsa is easy to make and full of flavor.

Ingredients

  • 2 ripe avocados, diced
  • 1 cup fresh or frozen corn kernels
  • 1/2 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, juiced
  • Salt and pepper, to taste

Instructions

  1. If using frozen corn, thaw and drain excess moisture.
  2. In a large bowl, combine diced avocados, corn kernels, red bell pepper, red onion, jalapeño, and cilantro.
  3. Drizzle lime juice over the mixture and gently toss to combine.
  4. Season with salt and pepper to taste.
  5. Serve immediately or refrigerate for up to 2 hours before serving to let flavors meld.

Notes

For extra crunch, serve with tortilla chips or as a topping for grilled chicken or fish. To add a smoky flavor, lightly char the corn before mixing.
