Authentic Crockpot Chicken Pozole Verde

Savor the rich, tangy flavors of this Authentic Crockpot Chicken Pozole Verde, a traditional Mexican stew featuring tender chicken and vibrant verde sauce slow-cooked to perfection.

  • 2 lbs boneless, skinless chicken thighs
  • 1 (25 oz) can hominy, drained and rinsed
  • 1 large onion, quartered
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2-3 poblano peppers, roasted and peeled
  • 3 tomatillos, husked and rinsed
  • 1 jalapeño, seeded
  • 1 cup fresh cilantro leaves
  • 1 tsp dried oregano
  • 1 tsp ground cumin
  • 2 tbsp lime juice
  • Salt and pepper to taste
  • Optional toppings: shredded cabbage, sliced radishes, diced avocado, lime wedges, chopped onion, tortilla chips

Instructions

  1. Roast poblano peppers under a broiler or on a grill until charred, then place in a sealed bag to steam for 10 minutes. Peel off skins and chop roughly.
  2. In a blender, combine roasted poblano peppers, tomatillos, jalapeño, cilantro, half the onion, garlic, oregano, cumin, and 1 cup chicken broth. Blend until smooth.
  3. Place chicken thighs, remaining onion, hominy, and the blended verde sauce into the crockpot.
  4. Pour in the remaining chicken broth and stir to combine. Season with salt and pepper.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and easily shredded.
  6. Remove chicken, shred it with two forks, and return it to the crockpot. Stir well.
  7. Stir in lime juice and adjust seasoning as needed.
  8. Serve hot with desired toppings like shredded cabbage, radishes, avocado, lime wedges, onion, and tortilla chips.

Notes

For extra depth, garnish with a drizzle of Mexican crema or add a pinch of smoked paprika to the blend before cooking.
