Asian Cucumber Salad

A refreshing Asian Cucumber Salad featuring crisp cucumbers tossed in a tangy soy-sesame dressing, perfect as a light side or snack.

Ingredients

  • 2 large cucumbers, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 1 teaspoon sugar
  • 1 garlic clove, minced
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon toasted sesame seeds
  • 2 green onions, sliced
  • Optional: red pepper flakes to taste

Instructions

  1. Place the sliced cucumbers in a large bowl.
  2. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, sugar, garlic, and ginger until the sugar dissolves.
  3. Pour the dressing over the cucumbers and toss to coat evenly.
  4. Sprinkle toasted sesame seeds and green onions over the salad.
  5. If desired, add red pepper flakes for a spicy kick.
  6. Chill the salad for at least 15 minutes before serving to enhance flavors.

Notes

For added crunch, sprinkle crushed peanuts on top before serving or serve alongside grilled meats for a complete meal.
