Argentine Chimichurri Flank Steak

A vibrant and flavorful Argentine-inspired flank steak marinated and served with zesty chimichurri sauce, perfect for a satisfying grilled dinner.

  • 1.5 pounds flank steak
  • 1 cup fresh parsley, finely chopped
  • 4 cloves garlic, minced
  • 2 tablespoons fresh oregano, chopped
  • 1/3 cup red wine vinegar
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon red pepper flakes
  • Salt and freshly ground black pepper, to taste
  • Juice of 1 lemon (optional)

Instructions

  1. In a bowl, combine parsley, garlic, oregano, red wine vinegar, olive oil, red pepper flakes, salt, and black pepper to prepare the chimichurri sauce. Set aside.
  2. Season the flank steak generously with salt and pepper on both sides.
  3. Preheat a grill to high heat.
  4. Grill the flank steak for about 4-5 minutes per side for medium-rare, or adjust to your desired doneness.
  5. Remove the steak from the grill and let it rest for 5-10 minutes.
  6. Slice the steak thinly against the grain and drizzle with chimichurri sauce before serving.
  7. Optionally, squeeze fresh lemon juice over the steak for added brightness.

Notes

For extra flavor, marinate the steak in half of the chimichurri sauce for 1-2 hours before grilling and reserve the rest for serving.
