Yellow Squash Parmesan is a delicious baked dish combining tender yellow squash slices with savory Parmesan cheese and herbs, perfect as a comforting side or light main.

  • 3 medium yellow squash, thinly sliced
  • 1 cup grated Parmesan cheese
  • 1/2 cup Italian-style breadcrumbs
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, toss the yellow squash slices with olive oil, minced garlic, salt, pepper, and dried oregano until evenly coated.
  3. Layer half of the squash slices in a lightly greased baking dish.
  4. Sprinkle half of the breadcrumbs and Parmesan cheese evenly over the squash.
  5. Repeat with the remaining squash slices, breadcrumbs, and Parmesan cheese.
  6. Bake uncovered for 25-30 minutes, until squash is tender and the top is golden brown.
  7. Garnish with chopped fresh parsley before serving, if desired.

Notes

For added richness, you can sprinkle some shredded mozzarella on top before baking or serve with a side of marinara sauce for dipping.
