Creamy White Lasagna Soup in Bowl

  • 1 pound Italian sausage, removed from casings
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 cups chicken broth
  • 1 (15 ounce) container ricotta cheese
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces lasagna noodles, broken into bite-sized pieces
  • 2 cups chopped fresh spinach
  • Fresh basil, for garnish

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium-high heat. Drain off any excess grease.
  2. Add the onion and garlic to the pot and cook until softened, about 5 minutes.
  3. Pour in the chicken broth and bring to a boil.
  4. Stir in the ricotta cheese, heavy cream, Parmesan cheese, oregano, salt, and pepper. Reduce heat to low and simmer for 10 minutes, stirring occasionally.
  5. Add the lasagna noodles and cook until tender, about 10-12 minutes.
  6. Stir in the spinach and cook until wilted, about 2 minutes.
  7. Ladle into bowls and garnish with fresh basil.

Notes

For a richer flavor, use Italian sausage with fennel. You can also add a pinch of red pepper flakes for a little heat.
