Delicious White Almond Cake

A light and fluffy White Almond Cake featuring delicate almond flavor and a tender crumb, perfect for celebrations or afternoon tea.

  • 1 cup (120g) all-purpose flour
  • 1 cup (100g) almond flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup (170g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • 1/2 cup (120ml) whole milk
  • 1/2 cup sliced almonds, toasted (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. In a bowl, whisk together all-purpose flour, almond flour, baking powder, and salt.
  3. In a large mixing bowl, cream the softened butter and sugar together until light and fluffy.
  4. Add the eggs one at a time to the butter mixture, beating well after each addition.
  5. Stir in vanilla and almond extracts.
  6. Gradually add the dry ingredients alternately with the milk, beginning and ending with the dry ingredients. Mix until just combined.
  7. Pour the batter into the prepared cake pan and smooth the top. Sprinkle sliced almonds evenly over the batter.
  8. Bake for 35–40 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For an extra moist cake, brush the cooled cake with a simple almond syrup or serve with whipped cream and fresh berries.
