Vegan Poke Bowl

A vibrant and nutritious Vegan Poke Bowl featuring marinated tofu, fresh vegetables, and a savory soy-ginger dressing, perfect for a wholesome plant-based meal.

  • 1 block firm tofu, pressed and cubed
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon grated fresh ginger
  • 1 cup cooked sushi rice
  • 1/2 cup diced cucumber
  • 1/2 cup shredded carrots
  • 1/4 cup edamame, shelled
  • 1 avocado, sliced
  • 2 tablespoons chopped green onions
  • 1 tablespoon toasted sesame seeds
  • 1 sheet nori, cut into thin strips (optional)

Instructions

  1. Press the tofu to remove excess water, then cube it into bite-sized pieces.
  2. In a bowl, combine soy sauce, sesame oil, rice vinegar, and grated ginger to make the marinade.
  3. Marinate the tofu cubes in the mixture for at least 15 minutes, stirring occasionally.
  4. Prepare the sushi rice according to package instructions and let it cool slightly.
  5. In serving bowls, layer the sushi rice as the base.
  6. Top the rice with marinated tofu, diced cucumber, shredded carrots, edamame, and avocado slices.
  7. Sprinkle chopped green onions, toasted sesame seeds, and nori strips over the bowl.
  8. Serve immediately and enjoy your fresh, flavorful Vegan Poke Bowl.

Notes

For extra flavor, add a drizzle of sriracha mayo made from vegan mayonnaise and sriracha sauce, or garnish with pickled ginger for a tangy twist.
