Vegan No-Bake Brownies with Dates Nuts

Deliciously rich and fudgy vegan no-bake brownies made with natural sweetness from dates and crunch from mixed nuts, perfect for a healthy dessert or snack.

  • 1 1/2 cups Medjool dates, pitted
  • 1 cup mixed nuts (walnuts, almonds, cashews)
  • 1/4 cup cocoa powder
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 2 tbsp almond butter (optional for extra creaminess)

Instructions

  1. Place the dates and mixed nuts in a food processor and pulse until finely chopped and sticky.
  2. Add cocoa powder, vanilla extract, salt, and almond butter if using. Process until the mixture starts to come together and forms a sticky dough.
  3. Line a small baking dish with parchment paper.
  4. Press the brownie mixture firmly into the dish, smoothing the top with a spatula.
  5. Refrigerate for at least 1 hour to set.
  6. Once firm, cut into squares and serve chilled or at room temperature.

Notes

For an extra indulgent touch, sprinkle some shredded coconut or vegan chocolate chips on top before refrigerating.
