Turmeric Ginger Chicken Noodle Soup

A warming and nourishing chicken noodle soup infused with anti-inflammatory turmeric and zesty ginger, perfect for boosting immunity and comfort on chilly days.

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 8 cups chicken broth
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 2 cups cooked chicken breast, shredded
  • 6 ounces egg noodles
  • Salt and pepper, to taste
  • Fresh parsley, chopped (optional garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add garlic, grated ginger, and ground turmeric; cook for 1-2 minutes until fragrant.
  3. Pour in chicken broth and bring to a boil.
  4. Add sliced carrots and celery; simmer for 10 minutes until vegetables are tender.
  5. Stir in shredded cooked chicken and egg noodles; cook according to noodle package instructions, usually 6-8 minutes.
  6. Season with salt and pepper to taste.
  7. Ladle soup into bowls and garnish with fresh parsley if desired. Serve hot.

Notes

For extra depth, add a squeeze of lemon juice before serving or top with a sprinkle of chili flakes for mild heat.
