Turmeric Chicken Soup

This vibrant Turmeric Chicken Soup is a nourishing blend of tender chicken, warming turmeric, and wholesome vegetables, perfect for a comforting and healthy meal.

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1 tbsp ground turmeric
  • 1 tsp ground cumin
  • 6 cups chicken broth
  • 2 cups cooked shredded chicken
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup diced tomatoes
  • 1 cup kale or spinach, chopped
  • Salt and black pepper to taste
  • Juice of 1 lemon
  • Fresh cilantro, chopped (optional garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes.
  2. Add garlic, ginger, turmeric, and cumin; sauté for 1-2 minutes until fragrant.
  3. Pour in chicken broth and bring to a boil.
  4. Add carrots, celery, and diced tomatoes. Reduce heat and simmer for 15 minutes until vegetables are tender.
  5. Stir in cooked shredded chicken and kale/spinach; cook for an additional 5 minutes.
  6. Season with salt, pepper, and lemon juice to taste.
  7. Ladle soup into bowls, garnish with fresh cilantro if desired, and serve warm.

Notes

For extra creaminess, stir in a splash of coconut milk before serving or serve with warm crusty bread for a heartier meal.
