Turkey Medallions with Orange Teriyaki Sauce

  • 1 lb turkey breast medallions
  • 1/2 cup orange juice
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp grated fresh ginger
  • 2 cloves garlic, minced
  • 1 tbsp cornstarch mixed with 2 tbsp water (slurry)
  • 2 tbsp vegetable oil
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (optional, for garnish)

Instructions

  1. In a small bowl, whisk together orange juice, soy sauce, honey, rice vinegar, ginger, and minced garlic.
  2. Heat vegetable oil in a skillet over medium-high heat.
  3. Season turkey medallions lightly with salt and pepper, then add to the skillet and cook for about 3-4 minutes per side until golden and cooked through. Remove from skillet and set aside.
  4. Pour the orange teriyaki mixture into the skillet and bring to a simmer.
  5. Stir in the cornstarch slurry and cook for 1-2 minutes until the sauce thickens.
  6. Return the turkey medallions to the skillet, spooning the sauce over them to coat evenly.
  7. Cook for an additional minute to heat through, then remove from heat.
  8. Garnish with sliced green onions and sesame seeds if desired before serving.

Notes

For extra depth, add a splash of toasted sesame oil to the sauce or serve over steamed jasmine rice and sautéed vegetables.
