Ingredients

Scale
  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can tomato sauce
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth (or chicken or vegetable broth)
  • Optional toppings: shredded cheese, sour cream, chopped green onions

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add ground turkey and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add onion, garlic, and bell peppers to the pot and cook until softened, about 5 minutes.
  3. Stir in kidney beans, black beans, diced tomatoes, tomato sauce, diced tomatoes and green chilies, chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and pepper.
  4. Pour in beef broth and bring to a simmer.
  5. Reduce heat to low, cover, and simmer for at least 30 minutes, or up to 1 hour, stirring occasionally, to allow the flavors to meld.
  6. Serve hot, topped with shredded cheese, sour cream, and chopped green onions, if desired.

Notes

For a spicier chili, add more cayenne pepper or a pinch of red pepper flakes. Leftovers can be stored in the refrigerator for up to 3 days or frozen for longer storage.
