Sweet Potato Casserole

This Sweet Potato Casserole features tender mashed sweet potatoes topped with a crunchy pecan and brown sugar streusel, making it a perfect comforting side dish for holidays or any cozy meal.

  • 4 cups mashed sweet potatoes (about 4 large sweet potatoes)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/3 cup melted butter
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 cup chopped pecans
  • 1/2 cup brown sugar
  • 1/3 cup all-purpose flour
  • 1/3 cup melted butter (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Boil sweet potatoes in a large pot until tender, about 20-30 minutes. Drain and mash until smooth.
  3. In a large bowl, combine mashed sweet potatoes, granulated sugar, eggs, melted butter, milk, vanilla extract, salt, and cinnamon. Mix until well blended.
  4. Pour sweet potato mixture into the prepared baking dish and spread evenly.
  5. In a separate bowl, combine chopped pecans, brown sugar, flour, and melted butter to create the topping mixture.
  6. Sprinkle the pecan topping evenly over the sweet potato layer.
  7. Bake uncovered for 30-35 minutes, or until the topping is golden brown and the casserole is heated through.
  8. Remove from oven and let cool for a few minutes before serving.

Notes

For extra flavor, add a pinch of nutmeg to the sweet potato mixture or drizzle with a bit of maple syrup before serving.
