  • 2 boneless, skinless chicken breasts, sliced
  • 1 cup cooked jasmine rice
  • 1 red bell pepper, sliced
  • 1 cup broccoli florets
  • 1/2 cup shredded carrots
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 teaspoon olive oil
  • 1 garlic clove, minced
  • 1 teaspoon grated ginger
  • 1 green onion, sliced
  • Sesame seeds for garnish

Instructions

  1. Heat olive oil in a skillet over medium heat. Add minced garlic and grated ginger; sauté until fragrant.
  2. Add sliced chicken breasts to the skillet and cook until browned and cooked through, about 6-8 minutes.
  3. Add sliced red bell pepper, broccoli florets, and shredded carrots to the skillet. Stir-fry for 4-5 minutes until vegetables are tender-crisp.
  4. Pour in sweet chili sauce and soy sauce, stirring to coat the chicken and vegetables evenly. Cook for an additional 2 minutes.
  5. Serve the chicken and vegetable mixture over cooked jasmine rice in bowls.
  6. Garnish with sliced green onions and a sprinkle of sesame seeds before serving.

Notes

For extra heat, add a pinch of red chili flakes or a fresh sliced chili. This dish pairs well with steamed edamame or a light cucumber salad.
