Introduction to Swedish Coffee Cake Caramels

  • 1 cup heavy cream
  • 1/2 cup unsalted butter
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon cardamom
  • 1/4 teaspoon salt
  • Powdered sugar, for dusting (optional)

Instructions

  1. Line an 8×8 inch pan with parchment paper and set aside.
  2. In a heavy-bottomed saucepan, combine sugar, heavy cream, butter, and corn syrup.
  3. Cook over medium heat, stirring constantly until the sugar dissolves.
  4. Attach a candy thermometer to the pan and continue to cook without stirring until the temperature reaches 245°F (firm ball stage).
  5. Remove from heat and stir in vanilla extract, cinnamon, cardamom, and salt.
  6. Pour the caramel mixture into the prepared pan and let cool completely at room temperature.
  7. Once set, cut into small squares and dust with powdered sugar if desired.
  8. Store caramels in an airtight container at room temperature for up to two weeks.

Notes

For a richer flavor, try adding a pinch of ground cloves or a splash of brewed Swedish coffee to the caramel mixture before cooking.
