Sugar Cookie Cheesecake

This Sugar Cookie Cheesecake combines the buttery sweetness of sugar cookies with a creamy cheesecake layer, perfect for a delightful dessert experience.

  • 1 1/2 cups sugar cookie crumbs
  • 1/4 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1/4 cup all-purpose flour
  • 1/4 tsp salt
  • Sugar cookie dough for garnish (optional)

Instructions

  1. Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  2. Mix sugar cookie crumbs with melted butter; press into the bottom of the pan to form crust.
  3. In a large bowl, beat cream cheese until smooth.
  4. Add sugar and beat until combined.
  5. Mix in eggs one at a time, then stir in vanilla extract.
  6. Add sour cream, flour, and salt; mix until smooth.
  7. Pour batter over crust and spread evenly.
  8. Bake for 50-60 minutes or until center is set but slightly jiggly.
  9. Cool to room temperature, then refrigerate for at least 4 hours before serving.
  10. Optionally, decorate top with small baked sugar cookie pieces before serving.

Notes

For an extra festive touch, garnish with mini sugar cookies or a dusting of powdered sugar before serving.
