  • 1.5 lbs boneless, skinless chicken thighs
  • 1/2 cup chicken broth
  • 1/4 cup lemon juice
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup Kalamata olives, pitted and halved
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup chopped red onion (optional)

Instructions

  1. Place chicken thighs in the slow cooker.
  2. In a bowl, whisk together chicken broth, lemon juice, olive oil, garlic, oregano, thyme, salt, and pepper.
  3. Pour the mixture over the chicken.
  4. Add Kalamata olives to the slow cooker.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours, or until chicken is cooked through and easily shreds with a fork.
  6. Shred the chicken with two forks.
  7. Serve immediately, topped with feta cheese and red onion, if desired.
