Shrimp Fried Rice

A flavorful and quick shrimp fried rice dish loaded with fresh vegetables and savory seasonings, perfect for a satisfying weeknight meal.

  • 2 cups cooked jasmine rice (preferably day-old)
  • 1/2 lb shrimp, peeled and deveined
  • 2 tablespoons vegetable oil
  • 2 eggs, beaten
  • 1/2 cup diced onions
  • 1/2 cup peas and carrots (frozen mix)
  • 3 cloves garlic, minced
  • 3 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 2 green onions, sliced
  • Salt and pepper, to taste

Instructions

  1. Heat 1 tablespoon vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the shrimp and cook until pink and opaque, about 2-3 minutes; remove and set aside.
  3. In the same skillet, pour in the beaten eggs and scramble until just cooked; remove and set aside.
  4. Add the remaining vegetable oil to the skillet and sauté onions and garlic until fragrant and translucent.
  5. Stir in peas and carrots and cook for 2-3 minutes until tender.
  6. Add the cooked rice, breaking up any clumps, and stir-fry for 3-4 minutes.
  7. Return shrimp and scrambled eggs to the skillet; mix well.
  8. Pour in soy sauce and sesame oil, stirring to combine all ingredients evenly.
  9. Season with salt and pepper to taste.
  10. Remove from heat, garnish with sliced green onions, and serve hot.

Notes

For extra flavor, add a dash of oyster sauce or a sprinkle of crushed red pepper flakes to the fried rice before serving.
