1 lb shrimp, peeled and deveined
1 cup long grain white rice
2 cups chicken broth
1 small onion, finely chopped
1 green bell pepper, finely chopped
2 stalks celery, finely chopped
3 cloves garlic, minced
2 tbsp olive oil
1 tsp smoked paprika
1/2 tsp cayenne pepper
1/2 tsp dried thyme
1/2 tsp dried oregano
Salt and black pepper to taste
2 green onions, sliced
Fresh parsley, chopped (for garnish)
Instructions
Cook the rice in chicken broth according to package instructions; set aside.
Heat olive oil in a large skillet over medium heat. Add onion, bell pepper, and celery; sauté until softened, about 5 minutes.
Add garlic, smoked paprika, cayenne, thyme, and oregano; cook for 1-2 minutes until fragrant.
Add shrimp to the skillet; cook until pink and opaque, about 3-4 minutes. Season with salt and black pepper.
Stir the cooked rice into the skillet and combine well with the shrimp and vegetables. Cook for an additional 2 minutes to blend flavors.
Remove from heat; garnish with sliced green onions and chopped parsley before serving.
Notes
For extra heat, add more cayenne pepper or serve with hot sauce on the side.
