shrimp casserole

  • 1 pound shrimp, peeled and deveined
  • 2 cups cooked rice
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped onions
  • 1/2 cup chopped celery
  • 1 can (10.5 oz) cream of mushroom soup
  • 1/2 cup mayonnaise
  • 1/4 cup milk
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup crushed buttery crackers or breadcrumbs
  • 2 tablespoons melted butter

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine cream of mushroom soup, mayonnaise, milk, garlic powder, salt, and black pepper. Mix well.
  3. Add cooked rice, chopped onions, chopped celery, and shrimp to the mixture. Stir to combine.
  4. Pour the mixture into a greased 9×13 inch baking dish.
  5. Sprinkle shredded cheddar cheese evenly over the top.
  6. In a small bowl, mix crushed crackers or breadcrumbs with melted butter. Sprinkle this mixture over the cheese layer for a crunchy topping.
  7. Bake uncovered for 25-30 minutes until bubbly and golden brown on top.
