This Sausage and Tortellini Soup is a hearty and flavorful one-pot meal perfect for a cozy night in. Packed with Italian sausage, cheese tortellini, and fresh vegetables in a rich tomato broth, it’s a family favorite that’s quick and easy to prepare.

  • 1 pound Italian sausage, removed from casing
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 6 cups chicken broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • 9 ounces cheese tortellini
  • 1 cup chopped fresh spinach
  • Grated Parmesan cheese, for serving

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  3. Stir in the crushed tomatoes, chicken broth, dried oregano, and dried basil. Season with salt and pepper to taste.
  4. Bring the soup to a simmer, then reduce heat and cook for 15 minutes to allow the flavors to meld.
  5. Stir in the cheese tortellini and cook according to package directions, usually about 3-5 minutes, or until the tortellini are tender.
  6. Stir in the chopped spinach and cook until wilted, about 1 minute.
  7. Serve hot, garnished with grated Parmesan cheese.

Notes

For a spicier soup, use hot Italian sausage. You can also add other vegetables, such as carrots, celery, or zucchini.
