Sausage and Courgette Pasta

A flavorful and hearty pasta dish combining savory sausage and tender courgettes, perfect for a quick and satisfying Italian-inspired meal.

Ingredients

  • 250g pasta (penne or rigatoni)
  • 2 sausages, sliced
  • 1 large courgette, sliced
  • 2 cloves garlic, minced
  • 1 small onion, chopped
  • 2 tbsp olive oil
  • 100ml white wine (optional)
  • 200ml tomato passata
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • Grated Parmesan cheese, to serve

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add the sliced sausages and cook until browned and cooked through, about 5-7 minutes.
  3. Add the chopped onion and minced garlic to the skillet and sauté until softened and fragrant, about 3 minutes.
  4. Stir in the sliced courgette and cook for another 4-5 minutes until tender.
  5. Pour in the white wine, if using, and let it simmer for 2 minutes to reduce slightly.
  6. Add the tomato passata, season with salt and pepper, and simmer for 5-7 minutes until the sauce thickens.
  7. Toss the cooked pasta into the skillet with the sauce and sausage mixture until well combined and heated through.
  8. Serve topped with fresh basil leaves and grated Parmesan cheese.

Notes

For extra flavor, try adding a pinch of chili flakes while sautéing the garlic and onion or finish the dish with a drizzle of good quality extra virgin olive oil.
