Scale
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tablespoons cocoa powder
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup buttermilk
  • Decorative chocolate chips or icing for eyes and nose

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add the egg, vanilla extract, and red food coloring; mix until well combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture alternately with the buttermilk, mixing until just combined.
  6. Roll out the dough on a floured surface to about ¼ inch thickness and use a bear-shaped cookie cutter to cut out cookies.
  7. Place cookies on the prepared baking sheet about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are set.
  9. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  10. Decorate with chocolate chips or icing to create bear eyes and nose.

Notes

For extra festive flair, try using white chocolate chips or colored icing to decorate your bears. These cookies also pair beautifully with a glass of cold milk or a cup of hot cocoa.
