Cozy Bowl of Ravioli Soup

This cozy Ravioli Soup is a quick and easy weeknight meal. Tender ravioli simmered in a flavorful tomato broth with spinach and Parmesan cheese makes for a comforting and satisfying dish.

Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1 (20 ounce) package frozen cheese ravioli
  • 5 ounces fresh spinach, roughly chopped
  • 1/4 cup grated Parmesan cheese, plus more for serving

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  2. Stir in crushed tomatoes, vegetable broth, oregano, and red pepper flakes (if using). Season with salt and pepper to taste. Bring to a simmer.
  3. Add frozen ravioli and cook according to package directions, usually about 5-7 minutes, or until tender.
  4. Stir in spinach and cook until wilted, about 1 minute.
  5. Stir in Parmesan cheese. Serve hot, garnished with additional Parmesan cheese.

Notes

For a richer flavor, use chicken broth instead of vegetable broth. You can also add other vegetables, such as carrots or zucchini.
