  • 1 loaf of brioche or challah bread, cubed
  • 2 cups whole milk
  • 1 cup canned pumpkin puree
  • 4 large eggs
  • 3/4 cup brown sugar
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons melted butter
  • Maple syrup, for serving

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter.
  2. Place the cubed bread evenly into the prepared baking dish.
  3. In a large bowl, whisk together the eggs, milk, pumpkin puree, brown sugar, pumpkin pie spice, cinnamon, nutmeg, salt, and vanilla extract until smooth.
  4. Pour the pumpkin mixture evenly over the bread cubes, pressing down gently to soak the bread.
  5. Cover the dish with foil and refrigerate for at least 2 hours or overnight for best results.
  6. Remove the casserole from the refrigerator 30 minutes before baking. Drizzle melted butter over the top.
  7. Bake covered for 30 minutes, then remove the foil and bake for an additional 15-20 minutes, until the top is golden and the center is set.
  8. Let cool slightly before serving. Drizzle with maple syrup if desired.
