Pumpkin Cottage Cheese Bake

A comforting and nutritious baked casserole combining creamy cottage cheese and spiced pumpkin, perfect for a wholesome breakfast or dessert.

  • 1 cup canned pumpkin puree
  • 2 cups low-fat cottage cheese
  • 2 large eggs
  • 1/4 cup maple syrup
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • Optional: 1/4 cup chopped pecans or walnuts

Instructions

  1. Preheat the oven to 350°F (175°C) and lightly grease a baking dish.
  2. In a large bowl, whisk together the eggs, maple syrup, vanilla extract, cinnamon, nutmeg, and salt.
  3. Add the pumpkin puree and cottage cheese to the mixture and stir until well combined.
  4. Pour the batter into the prepared baking dish and smooth the surface.
  5. Sprinkle chopped pecans or walnuts over the top, if using.
  6. Bake for 35–40 minutes or until the edges are set and a toothpick inserted in the center comes out clean.
  7. Allow to cool slightly before serving. Enjoy warm or chilled.

Notes

For added texture and flavor, top with a sprinkle of cinnamon or a drizzle of honey before serving.
