  • 1 tablespoon sesame oil
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 6 cups chicken broth
  • 2 cups water
  • 1 tablespoon soy sauce
  • 1 teaspoon rice vinegar
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 pound frozen potstickers
  • 1 cup shredded carrots
  • 1 cup chopped bok choy
  • 2 green onions, sliced
  • Sesame seeds, for garnish

Instructions

  1. Heat sesame oil in a large pot over medium heat. Add garlic and ginger and cook for 1 minute, until fragrant.
  2. Pour in chicken broth and water. Add soy sauce, rice vinegar, and red pepper flakes (if using). Bring to a boil.
  3. Add frozen potstickers, carrots, and bok choy. Reduce heat and simmer for 8-10 minutes, or until potstickers are cooked through.
  4. Ladle soup into bowls and garnish with green onions and sesame seeds.
  5. Serve immediately.

Notes

For a richer flavor, use homemade chicken broth. You can also add other vegetables such as mushrooms or spinach.
