Pistachio Lush is a decadent, layered dessert featuring a creamy pistachio pudding, whipped topping, and a crunchy cookie crust, perfect for any special occasion.

Ingredients

  • 1 package (8 oz) cream cheese, softened
  • 1 cup powdered sugar
  • 2 cups cold milk
  • 1 package (3.4 oz) instant pistachio pudding mix
  • 1 cup heavy whipping cream, whipped
  • 1 package (16 oz) sandwich cookies, crushed (e.g., Oreos)
  • 6 tablespoons butter, melted
  • 1 cup chopped pistachios (optional for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). Mix the crushed cookies with melted butter and press firmly into the bottom of a 9×13-inch baking dish to form a crust.
  2. Bake the crust for 10 minutes, then let it cool completely.
  3. In a large bowl, beat the cream cheese and powdered sugar until smooth and creamy.
  4. Prepare the pistachio pudding by whisking the pudding mix into cold milk until thickened.
  5. Fold the pudding into the cream cheese mixture until well combined.
  6. Gently fold in half of the whipped cream into the pudding mixture to lighten it.
  7. Spread the pistachio filling evenly over the cooled cookie crust.
  8. Top with the remaining whipped cream and garnish with chopped pistachios if desired.
  9. Refrigerate for at least 4 hours or overnight before serving to allow layers to set.

Notes

For an extra indulgent touch, drizzle melted white chocolate over the top before serving.
