  • 1 tablespoon olive oil
  • 1 pound sirloin steak, thinly sliced
  • 1 large onion, chopped
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 4 cloves garlic, minced
  • 8 cups beef broth
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste
  • 8 ounces provolone cheese, shredded
  • Optional toppings: chopped green onions, crusty bread

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add the sliced steak and cook until browned, about 5-7 minutes. Remove the steak from the pot and set aside.
  2. Add the chopped onion and bell peppers to the pot and cook until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Pour in the beef broth and stir in the Worcestershire sauce and dried thyme. Bring to a boil, then reduce heat and simmer for 15 minutes to allow the flavors to meld.
  4. Return the cooked steak to the pot. Season with salt and pepper to taste.
  5. Stir in the shredded provolone cheese until melted and creamy.
  6. Ladle the soup into bowls and garnish with optional toppings like chopped green onions or serve with crusty bread.

Notes

For a spicier kick, add a pinch of red pepper flakes to the soup while simmering. You can also substitute the sirloin steak with shaved ribeye for a more authentic Philly cheesesteak flavor.
