Roast Beef in the Oven

A classic oven-roasted beef recipe that yields tender, juicy slices perfect for a hearty family dinner or special occasion.

Ingredients

  • 3-4 lbs beef roast (chuck or ribeye)
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tbsp fresh rosemary, chopped
  • 1 tbsp fresh thyme, chopped
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup beef broth
  • 1 large onion, quartered
  • 2 carrots, cut into chunks
  • 2 celery stalks, cut into chunks

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a small bowl, combine olive oil, garlic, rosemary, thyme, salt, and pepper to make a herb rub.
  3. Rub the herb mixture all over the beef roast evenly.
  4. Place the beef roast on a rack in a roasting pan. Surround with onion, carrots, and celery.
  5. Pour beef broth into the bottom of the roasting pan to keep the meat moist.
  6. Roast in the preheated oven for about 1 hour 20 minutes to 1 hour 40 minutes, or until internal temperature reaches 135°F (57°C) for medium-rare.
  7. Remove the roast from the oven and cover loosely with foil. Let rest for 15-20 minutes to allow juices to redistribute.
  8. Slice the roast beef thinly against the grain and serve with the roasted vegetables and pan juices.

Notes

For extra flavor, marinate the beef with the herb rub overnight in the refrigerator before roasting.
