Crispy on the outside and tender on the inside, Parmesan Potatoes are a flavorful baked side dish perfect for any meal. This easy recipe combines golden potatoes with savory Parmesan cheese and herbs for a deliciously satisfying treat.

  • 2 pounds baby potatoes, halved
  • 3 tablespoons olive oil
  • 1 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary, crushed
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the halved potatoes with olive oil, garlic powder, thyme, rosemary, salt, and pepper until evenly coated.
  3. Sprinkle the grated Parmesan cheese over the potatoes and toss again to distribute the cheese.
  4. Arrange the potatoes cut side down on the prepared baking sheet in a single layer.
  5. Bake for 25-30 minutes until the potatoes are golden and crisp on the outside and tender inside.
  6. Remove from the oven and garnish with chopped fresh parsley if desired. Serve hot.

Notes

For extra crispiness, try tossing the potatoes with a tablespoon of melted butter before baking or sprinkle a little extra Parmesan in the last 5 minutes of cooking.
