Omurice Japanese Rice Omelet

Omurice is a savory Japanese rice omelet combining fluffy eggs with flavorful ketchup fried rice, creating a comforting and visually delightful meal perfect for any time of day.

  • 2 cups cooked white rice
  • 2 large eggs
  • 1/2 small onion, finely chopped
  • 1/2 cup cooked chicken, diced
  • 2 tbsp ketchup
  • 1 tbsp vegetable oil
  • 1 tbsp butter
  • Salt and pepper, to taste
  • Optional: parsley for garnish

Instructions

  1. Heat vegetable oil in a skillet over medium heat and sauté the onion until soft.
  2. Add diced chicken and cook until heated through.
  3. Stir in the cooked rice and ketchup, mixing well to coat all ingredients. Season with salt and pepper. Remove from heat and set aside.
  4. In a bowl, beat the eggs with a pinch of salt.
  5. Heat butter in a clean non-stick pan over medium-low heat. Pour in half of the beaten eggs, swirling to form an even layer.
  6. When the eggs are half-cooked but still a bit runny on top, place half the fried rice mixture in the center.
  7. Carefully fold the omelet edges over the rice to enclose it, then slide onto a plate. Repeat with remaining eggs and rice for a second serving.
  8. Garnish with parsley if desired and serve immediately.

Notes

For added flavor, drizzle some extra ketchup or demi-glace sauce over the omurice before serving.
